I know the feat happened but it’s very inconsistent and felt like the plot demanded it.
 
I don't see why not.

First of all, as you said, it happened.

Second of all, the amount of energy he put into that was completely eclipsed (pun not intended) by Piccolo just a few years later who barely had to put in any effort to destroy the moon. The characters are very capable of drawing energy to destroy things ordinarily beyond them (ie Piccolo charging the Special Beam Cannon to kill Raditz and having to take time into doing that). And realistically, destroying the moon was very quickly not that impressive.

Let's not forget the the unspoken victims of Toriyama's gag writing and the multi-occasion destruction of Earth's satellite. Boss Rabbit and his crew were vaporized. Never forget.

Ah, but you're forgetting the crux of this argument where the Roshi's power is being called into question. They may not have been vaporised by the destruction.

Merely blasted into space with the rest of hte moon debris. If they didn't depressurise in space, they've probably been drifting for 30 years.

We can assume Roshi and his Kamehameha are moon level since during the fight with Raditz we see both Goku and Piccolo's power levels sharply increase when they're about to employ their ki based attacks. Sure it probably took damn near everything he had to do it but Roshi sure did make the moon go Ka-BLAM-O!
 
Hm That reminds me of something you know how the anime FRequently Mentions/ Shows How Everyone destructive power rises beyond Planet Busting!
(Galaxy in danger during BOG Anime and Reality Shattering during the broly fight?) All these feats were made up by toei it seems that in the Actual Toriyama canon
it works like this: Base Strength (Destructive but not extreme) And Exerting a lot of Effort (Planet Busting)

I mean if goku is almost destroying the universe during the beerus fight (with Punches) how is it that nothing major gets ever destroyed?!
