I have to agree, a lot of the great moments were the early days of DragonBall, getting to know the characters!

Any time Gohan's Innocence or Namekian Theme plays is a winner for me. I really like two (very close scenes) in the Cell Games where Goku is encouraging Gohan to fight (largely for the aforementioned theme), and also after when he powers up and there's the montage of everyone being all like:

Probably the Ui Awakening in the manga Goku going back to his roots as student of roshi was pretty satisfying After him basically throwing all his earthling traits out after being retconned as a saiyan!
