I've been meaning to get into Final Fantasy and Dragon Quest.
Not sure about Dragon Quest, but you can pick up any FF game and just play it. They're all different and none are related (apart from ones that are obivously direct sequels (ie X-2)).

If you like action RPGs, definitely try FF7 Remake - it's on PS4/5, Epic Games and Steam (in 8 hours). FFXV is also a lot of fun and usually goes pretty cheap. Final Fantasy 7, 9 and 10 are usually listed as the best ones. Get them on PC if you can as there's a lot of texture and QOL mods that make them wayyyyyyyyyy better.

In terms of classic turn-based (7-9 are ATB which is where there's a gage that fills up before you take your turn), the first one is pretty good and the 6th one is usually praised by FF fans. I enjoyed the 3D version of FF3 but a lot of classic fans hate it.

FF7 is probably the pinacle "starting point" for anyone. Definitely try Remake if you don't care if it's turn-based or not.

How many people start out with FF6?
It's largely to do with the quality of the game, what you're looking for, and when you get started.

FF7 has been the best rated game of all-time because of when it came out (1997, PS1) and the style - it turned FF from a high fantasy JRPG into a well-executed sci-fi JRPG with a great plot. FF6 came out on SNES I think. There's also a lot of other factors like up until around then the FF titles were harder to get and screwed around with (I think FF2 in the US was FF3 or something).

Take a look at some screenshots and/or gameplay and see if anything grabs you. A lot of people are attracted to FF7 because of the style and that it's talked about a lot. You might prefer the style of FF6.

I did LEts Play wise atleast!
It Has A story just as good as FF7!
But much better Graphics!
Also one thing you should know about FF7 Remake it not really a Remake its a Meta Sequel (im not kidding) and it spoils the last scene of the original FF7!

FF6 reminds me a lot of Chrono Trigger, which I like and am familiar with, so it catches my interest.
I love FF6. That was a quintessential part of my childhood. I have so many memories of rocking out to it on the SNES. (when it was Final Fantasy III in NA) Such a great game with an amazing soundtrack.

THAT'S the one that was mislabelled in the US. I was trying to figure out which one it was.
